Papa loves garden veggies, but then again, who doesn't?! He isn't one to really try or care for lots of flavor (the man doesn't use salt on purpose), but this is a recipe we can agree on.
The ground in Jack Co isn't great, but we can grow squash.
Here is a super simple (and cheap) dinner that is one of Papa's favorites.
Preheat oven at 350
Dice your onion and jalapeno and throw in skillet
Saute your veggies and season with salt and pepper
Throw in your hamburger mean and cook low and slow
While cooking, cut your squash (or zucchini) in half
scoop out the seeds with a big spoon and set aside.
Once meat mixture is cooked, fill the hallowed squash with mean mixture and top with cheese. Place on a cookie sheet and put in the over for 15-20 minutes or until squash is tender to the touch with a fork.
